To make soft chapati, you will need the following simple ingredients:

  • 2 cups whole wheat flour (atta)
  • 1/2 teaspoon salt (optional)
  • 1 tablespoon vegetable oil or ghee
  • 3/4 cup warm water (approximately)
  • Extra flour for rolling

Step-by-Step Guide on How to Make Soft Chapati

Step 1: Prepare the Dough

  1. Mix the Flour and Salt: In a large mixing bowl, add the whole wheat flour and salt. If you prefer your chapatis to be a little richer, you can also add a tablespoon of oil or ghee at this stage.
  2. Add Water Gradually: Start adding warm water to the flour mixture, a little at a time. Mix the flour with your hand as you add water, ensuring that the dough begins to come together. Keep adding water until the dough reaches a soft, smooth consistency. The exact amount of water may vary depending on the type of flour used.
  3. Knead the Dough: Once the dough starts coming together, knead it for 5-7 minutes. The dough should be soft, smooth, and pliable. If the dough feels too sticky, sprinkle a little more flour. If it’s too dry, add a few more drops of water.
  4. Rest the Dough: Cover the dough with a damp cloth or plastic wrap and let it rest for 20-30 minutes. Resting helps the gluten relax, making it easier to roll out and ensuring soft chapatis.

Step 2: Roll the Chapatis

  1. Divide the Dough: After resting, divide the dough into equal-sized balls. Each ball should be about the size of a golf ball or a little larger, depending on your desired chapati size.
  2. Roll the Balls into Circles: Take one dough ball and flatten it slightly with your fingers. Using a rolling pin, roll the dough into a thin, even circle. Try to keep the thickness uniform, and don’t worry if it’s not a perfect circle. The key is to roll it out as evenly as possible.
  3. Use Flour for Dusting: While rolling, dust the dough lightly with dry flour to prevent sticking. Be careful not to use too much flour, as excess flour can make the chapatis dry.

Step 3: Cook the Chapatis

  1. Heat the Tawa or Skillet: Place a heavy-bottomed tawa or skillet on medium-high heat. Allow it to get very hot, but not smoking. You can sprinkle a little water on the tawa to check if it’s hot enough. If the water sizzles and evaporates quickly, the tawa is ready.
  2. Cook the Chapatis: Place the rolled chapati onto the hot tawa. Let it cook for about 30 seconds or until small bubbles begin to form on the surface. Flip the chapati over using tongs or a spatula. You will notice darker spots forming on the underside.
  3. Press the Chapati: Once flipped, press the chapati gently with a cloth or spatula. This will help the chapati puff up, which is key to making it soft and fluffy.
  4. Flip Again: After about 20-30 seconds, flip the chapati once more. You should see the chapati puffing up. Cook for another 20-30 seconds on the other side.
  5. Remove from Heat: Once both sides are cooked and lightly browned, remove the chapati from the tawa and place it in a clean kitchen cloth or container to keep it warm. You can optionally brush it with a little ghee or butter for added flavor and softness.

Step 4: Serve and Enjoy

Serve your soft chapatis hot with your favorite curry, lentils, or vegetables. These chapatis also go perfectly with a side of yogurt or pickles. If you’ve made multiple chapatis, keep them wrapped in the cloth to maintain their softness.

  • Use Warm Water: Warm water helps activate the gluten in the flour, making the dough softer and easier to work with.
  • Rest the Dough: Don’t skip the resting period! It’s crucial for making the dough soft and ensuring the chapatis turn out tender.
  • Roll Evenly: Try to roll the dough as evenly as possible. Uneven thickness can lead to some parts of the chapati being undercooked or too crispy.
  • Cook on High Heat: Cooking on high heat helps the chapati puff up, which contributes to its softness.
  • Use Ghee or Butter: Brushing the chapati with ghee or butter after cooking adds a delicious richness and keeps it soft.
