Ingredients for Biryani

  • 1 cup yogurt
  • 1 tablespoon ginger garlic paste
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder (adjust to taste)
  • Salt to taste
  • Juice of 1 lemon
  • Fresh cilantro, chopped (optional)

  • 1/4 cup fried onions (optional)
  • 1/4 cup chopped cilantro and mint for garnish
  • Saffron strands soaked in warm milk (optional, for color and fragrance)

Step-by-Step Guide on How to Make Biryani

Step 1: Marinate the Meat or Vegetables

  1. Prepare the Marinade: In a large bowl, combine the yogurt, ginger garlic paste, ground turmeric, cumin, coriander, garam masala, chili powder, salt, lemon juice, cilantro, and mint. Add the chicken or meat of your choice and mix well.
  2. Marinate: Cover the bowl and let the meat marinate for at least 1-2 hours. For best results, marinate overnight in the refrigerator to allow the flavors to infuse.

Step 2: Cook the Rice

  1. Rinse the Rice: Rinse the basmati rice under cold water until the water runs clear. This removes excess starch, helping the rice stay separate when cooked.

Step 4: Layer the Biryani

  1. Layer the Rice and Meat: In a large pot or Dutch oven, begin layering the partially cooked rice and the meat mixture. Start with a layer of rice, followed by a layer of meat, and repeat until you’ve used up both.
  2. Garnish with Fried Onions and Herbs: After layering, sprinkle the fried onions, raisins, and some chopped cilantro and mint over the top. If you have saffron milk, drizzle it over the rice for added color and fragrance.

Step 5: Cook the Biryani

  1. Seal the Pot: Cover the pot with a tight-fitting lid. If necessary, seal the edges of the lid with dough to trap the steam inside, ensuring the biryani cooks evenly.
