To start your Kenyan Sukuma Wiki recipe, trim the tough stems from 500g of collard greens. Roll the leaves tightly, then slice them into 1 cm-wide ribbons. Now prepare Ugali. Bring 4 cups of water to a boil with 1 tsp sea salt and 1 tbsp butter or ghee. Gradually whisk in 1 cup fine white cornmeal, stirring constantly to avoid lumps. Switch to a wooden spoon as it thickens. Cook for 8–10 minutes total, pressing against the pot. Stop when the mixture pulls cleanly from the sides and holds its shape—much stiffer than polenta.
To serve, place a large plate over the pot and carefully flip it. The ugali should release as a smooth dome. If it sticks, cook another minute or two. Once out, cover it with a bowl to keep warm. Cut into wedges just before serving.
