Ugali—a firm, smooth cornmeal porridge—is the perfect base for Sukuma Wiki, a savory sauté of collard greens. This classic Kenyan dish features tomatoes, onions, garlic, and ginger. Translated as “stretch the week,” Sukuma Wiki shows the resourcefulness of Kenyan home cooking. When paired with spicy Mishkaki lamb skewers and fresh Kachumbari salsa, it becomes a full, authentic feast.

To start your Kenyan Sukuma Wiki recipe, trim the tough stems from 500g of collard greens. Roll the leaves tightly, then slice them into 1 cm-wide ribbons. Heat 3 tablespoons of olive oil in a wide pan over medium heat. Add thinly sliced garlic and matchstick-cut ginger. Cook until fragrant and lightly golden. Then toss in the greens and stir well.

Once the greens turn bright green, add diced tomatoes. Cover the pan and steam for 2–3 minutes. Afterward, uncover, season with sea salt, and serve right away while tender and vibrant.

Next, make Kachumbari—Kenya’s zesty tomato-onion salsa. Halve 250g of cherry tomatoes. Finely slice half a red onion and one hot chili, like serrano or Fresno. Roughly chop a handful of cilantro. Combine everything in a bowl, add a generous pinch of salt, and squeeze in the juice of one lime or half a lemon. Let it sit briefly—the acid softens the onions and lifts the flavors.

For Mishkaki, marinate 1kg of boneless lamb shoulder (cut into ½-inch cubes) in a bold mix: 2 tbsp salt, 1 tbsp each minced garlic and ginger, 2 tbsp vegetable oil, 2 tsp turmeric, 1–2 tsp chili powder, 2 tsp ground cumin or coriander, and juice from 2 limes. Let it rest at least 1 hour—or overnight for deeper flavor. Soak wooden skewers in water first. Then thread 4–5 pieces per stick. Grill or sear in a hot skillet until charred and cooked through, turning occasionally.

Now prepare Ugali. Bring 4 cups of water to a boil with 1 tsp sea salt and 1 tbsp butter or ghee. Gradually whisk in 1 cup fine white cornmeal, stirring constantly to avoid lumps. Switch to a wooden spoon as it thickens. Cook for 8–10 minutes total, pressing against the pot. Stop when the mixture pulls cleanly from the sides and holds its shape—much stiffer than polenta.

To serve, place a large plate over the pot and carefully flip it. The ugali should release as a smooth dome. If it sticks, cook another minute or two. Once out, cover it with a bowl to keep warm. Cut into wedges just before serving.

This Kenyan Sukuma Wiki recipe is more than a meal—it’s a celebration of tradition, resilience, and community. Each element balances the others: earthy ugali, tangy kachumbari, smoky mishkaki, and comforting greens. Together, they offer a true taste of Kenya. Serve warm, share generously, and enjoy the spirit of East African hospitality.
