Also known as chocolate puddle cookies, these decadent treats live up to their name—spreading into glossy, cracked mounds with molten centers and crisp edges. The key? Perfect timing. Overbake them, and they turn fully crisp as they cool. Underbake them, and they stay too soft, crumbly, and hard to lift off the parchment. But don’t worry—you’ll nail the sweet spot after one or two test batches!

This chocolate puddle cookies recipe uses just six simple ingredients and comes together in under 5 minutes of prep. There’s no flour, no butter, and no refined sugar beyond confectioners’—just walnuts, cocoa, egg whites, vanilla, salt, and powdered sugar for structure and sweetness.

Start by toasting 3 cups of walnut halves until fragrant, then let them cool completely before chopping them into pea-sized pieces. Next, sift together 4 cups of confectioners’ sugar and ½ cup plus 3 tablespoons of unsweetened cocoa powder. This step prevents lumps and ensures a smooth, uniform batter.

Stir in the salt and chopped walnuts. Then add 4 room-temperature egg whites and 1 tablespoon of high-quality vanilla extract. Mix just until everything blends into a thick, glossy batter—no overmixing needed.

Scoop 2-tablespoon mounds onto parchment-lined baking sheets. Leave plenty of space! These cookies spread dramatically—aim for no more than 6 per standard sheet pan, and keep them away from the edges.

Bake at 320°F (160°C) for 13–15 minutes. At first, they’ll look flat and sad—but have faith. They’ll puff up, develop glossy tops, and crack beautifully. You can rotate pans halfway if your oven runs uneven, but it’s often unnecessary.

Once out of the oven, slide the parchment (cookies still on it) onto a wire rack. Let them cool completely—ideally for a couple of hours. This resting time helps them set into the perfect texture: crisp outside, fudgy within, with satisfying walnut crunch throughout.

Store your chocolate puddle cookies in an airtight container for up to 2 days. Though honestly, they rarely last that long. With their intense chocolate flavor and melt-in-your-mouth texture, they’re irresistible warm or cooled.
