Unlike thick American pancakes, traditional English pancakes are light, delicate, and slightly thicker than French crepes. However, they remain thin enough to fold or roll easily around your favourite toppings. Because they use simple cupboard ingredients, this English pancakes recipe is perfect for quick breakfasts, desserts, or even dinner.

Although English pancakes and French crepes look similar, there are subtle differences. English pancakes tend to be slightly thicker, while French crepes are thinner and often include richer ingredients such as cream. Nevertheless, both are made using a smooth, pourable batter cooked in a lightly buttered pan.

One of the best things about this English pancakes recipe is its versatility. You can serve them sweet or savoury depending on your mood. For sweet options, try whipped cream with sticky toffee sauce and chopped nuts. Nutella with strawberries also works beautifully. Alternatively, sliced bananas with toffee sauce and ice cream create a comforting treat. For something indulgent, fill pancakes with mini marshmallows, grill briefly, then add melted chocolate and crushed biscuits.

On the savoury side, the possibilities are equally exciting. You could fill them with chilli con carne and top with sour cream and grated cheese. Chicken and ham in a creamy white sauce also pairs wonderfully. Thin ham with grated cheese makes a quick option. Meanwhile, smoked salmon with asparagus and cream cheese creates an elegant brunch choice. Despite all these ideas, many people still love the classic topping of lemon juice and caster sugar.

To make this English pancakes recipe, you only need a few ingredients. Gather plain flour, a pinch of salt, caster sugar if making sweet pancakes, three large eggs, one tablespoon of oil or melted butter, 500ml of milk, and butter for the pan.

Start by sieving the flour, salt, and sugar into a mixing bowl. Then beat the eggs with the oil or melted butter in a jug. Make a well in the centre of the flour and pour in the egg mixture. Next, add half the milk and whisk until smooth. Once the batter becomes lump-free, gradually pour in the remaining milk while whisking continuously. The final mixture should resemble pouring cream in consistency.

If you prefer, you can blend all ingredients in a blender. However, stop blending as soon as the batter becomes smooth. Overmixing develops too much gluten and results in tough pancakes. After mixing, allow the batter to rest for at least 30 minutes. Resting relaxes the gluten and improves texture, making the pancakes softer and lighter.

When ready to cook, heat a large non-stick frying pan over medium heat. Add a small knob of butter and wipe away excess with paper towel. Pour a ladle of batter into the pan and tilt it to spread the mixture evenly. Cook for two to three minutes until the underside turns speckled golden brown. Then flip using a spatula and cook for another couple of minutes.

Temperature control is crucial in this English pancakes recipe. If the pan is too hot, pancakes will burn before cooking through. If it is too cool, they will turn pale and cook unevenly. To test the heat, drop a small piece of butter into the pan. If it sizzles gently without browning instantly, the temperature is correct.

Flipping pancakes requires confidence. When bubbles appear on the surface and the pancake lifts easily with a spatula, it is ready to turn. Although the first pancake often looks imperfect, it usually tastes fine. Think of it as the cook’s reward while preparing the rest.

Pancake Day in the UK always falls on the Tuesday before Ash Wednesday, exactly 47 days before Easter Sunday. However, this English pancakes recipe works year-round.

If you have leftovers, store them in an airtight container. You can reheat them in a low oven or microwave in short bursts. For longer storage, freeze pancakes flat on a tray, then transfer them to freezer bags with baking paper between each one. They will keep for up to three months.

Each serving provides approximately 230 calories, with balanced carbohydrates, protein, and moderate fat content. Therefore, this recipe offers a satisfying yet manageable treat.
